SUMMARY:Teaching with Taste: Culinary Archaeology and Public Engagement
LOCATION:Glen Carbon Centennial Library\, 198 S Main Street Glen Carbon\,
IL 62034
DESCRIPTION:
The archaeology of cuisine explores diet and cooking in the
past\, and it holds the potential for capturing the imagination (and tast
e buds) of the public. Dr. Susan Kooiman from SIUE will discuss how the Ca
pturing Campus Cuisine project at Michigan State University demonstrated h
ow examination of 19th-century recipes and dishes can provide local commun
ities tangible means of experiencing the past. Exploration of ancient Indi
genous cuisine using burned food residue on ceramic cooking pots gives stu
dents and the public the opportunity to gaze even deeper into culinary his
tory.
